Truthfully it started with a recipe
from a blog. I decided since I've been lax in my baking/food pornography I thought I'd try something new. So I chose 2 recipe
s: Chocolate Chip Cookies (an Alton Brown recipe
) and Chocolate Peppermint Sandwich Cookies (which shall now be named the most. amazing. cookies
. ever. PERIOD.) A-f*$%ing-mazing! I wasn't so sure I mean no eggs? And then there was the my grocery store doesn't sell white chocolate
(which is gross btw) anymore fiasco -I then had to buy vanilla chip
So I made the chocolate chip
cookie dough first, because much to my dismay it needs to marinate so to speak in the fridge for 4 hours. 4 HOURS! Better be a damn good cookie Alton! So onto the real experiment - I (dutifully - of course) followed the instructions, mixed - said to myself that don't look right - after a while it looked kind of right.... I rolled, cut, re-rolled, cut again and then baked these beauties above and the odds and ends. Well the odds and ends were gone in like 2 seconds...I couldn't help it I swear! So then I HAD to make the filling, HAD to there was no other way. And so then something amazing happened..... it was so amazing I had to share it with the whole world, okay so maybe not the whole world - because unfortunately for you (poor soul) you only see pictures :( . I immediately packed some up and drove to my workplace(s) where I handed out these cookies
. I HAD to share them, they are that good! And now that I shared some they are ALL MINE! MUAHAHAhahahahaha. My precious!
And no I haven't been able to make the damn chocolate chip cookies
yet....I had to make dinner, so homemade pizza
and wings YUMMY! And then after I come down from this delusional ranting and eat I will then make some cookies
Rugelach Chocolate Pastry
For breakfast or dessert.
Recipe to follow:
2 cups all-purpose flour
1 cup whole wheat pastry flour
1/4 cup coconut oil
2 cups raw sugar
1/4 cup prepared egg-replacer ( flax seed for 4 eggs)
4 tbsp vegetable shortening
6 tbsp Tofutti cream cheese
1 package of active dry yeast dissolved in 1/4 cup warm Mimic Cream
8 oz dark chocolate chips
4 tbsp Earth Balance
1 vanilla bean, scraped
Pinch of salt
Dissolve the envelope of dry active yeast in 1/4 cup of warmed Mimic Cream.
Cream coconut oil, 1 cup of the sugar, egg-replacer, shortening, cream cheese, salt and vanilla bean in a mixer. Add the yeast slury.
Add the dry ingredients a bit at a time until you form a ball- once your dough is in a ball, cover with a damp cloth and set in a warm place to rise for 40 minutes, then move into the fridge to cool for at least 2-3 hours or overnight. Once the dough has risen and then cooled, separate it into 4 equal parts. Flour your surface and roll out the dough 1/4 inch thick.
Meanwhile, over medium heat melt the Earth Balance, 1 cup of sugar and 2 tbsp of tofu cream cheese. Stir until smooth. Spread 1/4 onto the rolled-out dough.
Sprinkle the dark chocolate chips over the dough.
Cut pizza-style into 16 equal pieces with a butcher knife.
Roll into small crescent-roll shapes. Repeat three more times for remaining dough and ingredients.
Place on a greased baking sheet, and bake at 350 for about 15 – 20 minutes, or until golden.
Makes 50 cookies.
